If you’ve tuned into #RecipeTok or sought out an easy meal idea on Instagram of late, then there’s no doubt you’ll have been served a FitWaffle recipe. A former personal trainer, Eloise Head started sharing her recipes in lockdown, as she wanted to keep up her passion for food photography. Fast forward to 2025 and her Fitwaffle channels have became a runaway success. Head boasts 5.8 million followers on TikTok and 1.8 million on Instagram.

“I wanted to post recipes that were really easy for people, because I think — especially with baking — people are put off by long ingredient lists and complicated recipes. Baking doesn’t have to be intimidating — that’s why my channels blew up,” recalls Head.

Now she’s released her fourth book Fitwaffle Easy Air Fryer: 100 of My Best Bakes, Quick Desserts and Simple Meals with a new hook: all of the meals and dessert ideas can be made in an air fryer. We all know the air fryer has cult status among a certain faction of Londoners, though Head reckons we should all be using them. She tells us 4 things you might not know about why they’re perfect for kitchens in the capital...

If I’m making a small meal or single portion, then instead of putting it in the oven, I’ll use the air frier instead. It's going to be quicker, it's going to taste just as good, or sometimes better. They’re more energy efficient, especially for a single-person-household or single person living on their own.

If you need an easy lunch like a toastie or a wrap, or even when cooking vegetables, they’ll cook so much quicker in the air fryer than in the microwave or oven. A lot of people don't realise that you can bake a lot of small batch recipes in an air fryer. I have a chocolate chip cookie recipe that’s in the book and I use it all the time. They're soft and chewy and really delicious. Even with a smaller air fryer, you can bake them in two batches without them burning or sticking together!.

Anyone could benefit from an air fryer because sometimes especially if you’re cooking a larger meal and you don't have room in the oven, you can turn on the it on to cook something separately, that you might have to have done afterwards, otherwise. It’s great if you’re having a dinner party.

Sold? Here’s Head’s 3 favourite air fryer recipes from her new book. Cooking time: 25 minutes. Makes 6 - 8. If you love a sweet and savoury combo like I do, these are for you. Crispy and juicy, coated in hot honey sauce, they’re irresistible. Perfect for a quick dinner or snack, and you can make them as spicy (or not spicy) as you like.

Ingredients:. For the sauce:. Serves 2. Stir-fry is one of my favourite dishes. I would cook it every night if my husband would let me. It’s so flavoursome, packed with veggies and so easy to make. Feel free to add a protein, like chicken, prawns (shrimp) or steak.

For sauce:. Cooking time: 30 minutes, plus 10 minutes standing time. This always reminds me of my birthday parties at the hut that serves pizza. It’s warm, gooey cookie with melted chocolate chips, topped with ice cream and sauce if that’s your thing (personally I’m an ice cream on the side kinda gal). It’s so easy, so delicious and perfect for sharing.
