Cocktail of the week: Roe’s carrot gimlet – recipe | The good mixer

Carrot juice, gin and lime – it’s almost virtuous. You’ll need a juicer to make the cordial, but otherwise this taste of winter is simplicity itself. Serves 1. For the cordial. About 10 carrots – or enough to make 600ml carrot juice. 150g caster sugar. ½ tsp citric acid.
For the drink. 40ml gin – we use No 3 London dry. 30ml carrot cordial (see above and method). 1 squeeze fresh lime juice. Juice the carrots in a juicer until you have roughly 600ml of juice. Pour this into a bowl and stir in the sugar and citric acid until dissolved. Decant into a clean bottle or jar, seal and put in the fridge until needed – the cordial will keep for about a week.
