Mendez said all of the bar's revenue on Sunday would go toward Ritter's daughter, and that donation boxes would be left in the bar for the next four weeks to collect more funds for the 10-year-old.
On Monday, the Las Vegas Metropolitan Police Department announced the arrests of Philip Strong, 18, and Charles Wright, 20, as suspects in the killing of 29-year-old Hope Ritter.
"Everything she did, she did for her daughter, to give her daughter a better life than she had, and that's how we want people to remember her," Mendez said.
Hope Ritter was the mother of a 10-year-old daughter and was studying to become a barber.
He said Ritter was someone who made people feel welcome at the bar.
