Speaking at a midday memorial service at St Mary's of the Rosary Church in Nenagh, Damien said: "I would like to begin by thanking all of our family and friends, the local community and the Kansas community for all of your support."
Shaun Brady, 44, was killed in an altercation outside the Brady and Fox eatery on August 28 last year in Kansas City, Missouri.
"To be that age and to know that cheffing was going to be his career and to be brave enough and stubborn enough to follow it and not be told no, Shaun Paul had a drive and a determination to succeed," he said.
He added: "Shaun Paul was a loving husband to Katie, a doting father to Seamus and Mary and cherished son to our mother Mary.
