Heat a large frying pan with oil over high heat. Add the sausages and cook until browned on all sides, then set aside. Next, cook the bacon until crispy, then set it aside as well.

3. Toss the onion, pepper, carrot and garlic clove into the frying pan and give it a good sizzle for five minutes on high heat. 4. Then, splash in the chicken stock, chopped tomatoes, sun-dried tomato paste and a sprinkle of thyme into the pan. Crank up the heat until the mixture starts to bubble, then toss in your potatoes.
