This innovative approach, dubbed “scallop discos,” offers a low-impact alternative to dredging, which harms seabed ecosystems. The Disco Scallop brand, now on menus at select restaurants, including Mitch Tonks’ Rockfish group, provides fishermen with diversified income and consumers with guilt-free scallops.
