The best restaurants outside of London have been named, with one that celebrates British ingredients grabbing the top spot. SquareMeal has announced it's annual ranking of the top restaurants in the UK, including pubs and renowned Michelin-star winners.
Taking the top spot was Restaurant Sat Bains — a two Michelin-starred fine dining restaurant. SquareMeal managing editor Ellie Donnell said: "Sat's creative tasting menus are brave and unique - taking risks that pay off and interweaving clever surprises - but more importantly they celebrate the joy of eating thanks to a deep-rooted understanding of flavour developed over decades.".
The Nottingham restaurant, named after the chef by the same name, features modern British cuisine that changes with the seasons. On the restaurant's website chef Sat Bains states: "Be the best, work hard, work fast, work clean. Every Ingredient we use has to be the best we can afford. Seasons have to rule the kitchen.
"Only allow minimum manipulation when necessary. Elevate flavours through understanding. Cook as if you are eating. Waste is poor workmanship. Extractions of flavour is our role in life as cooks. Balance of menu is our obligation to our guests. Health is crucial in menu planning. Seasoning is a true skill, so taste, taste and taste again. Our goal is to be the best so we should act like the best.".
