Celebrity chef Jamie Oliver has taken to TikTok - where he boasts over 700,000 followers - to share his scrumptious vanilla mug cake recipe. He greeted his fans with a cheery: "Happy January everybody. So my team have briefed me to come up with a hug in a mug, something beautiful." Jamie went on to say: "I'm going to show you how to make a beautiful mug cake. Now, interestingly, mug cakes are about the only thing that seems to be engaging my teenagers in the art of cooking at the moment.
"They see it on TikTok or Snapchat or whatever other platform they're sharing around, and they come up with these incredible recipes that generally never work if I'm honest.". Determined to provide a foolproof option, he added: "So I thought I'd give you a delicious mug cake that does work, that's amazing. This basis of a recipe is brilliant, and you can kind of flex it to do different things at different times of the year.".
As for the method, Jamie instructed to begin by adding a small banana to a food processor along with four tablespoons of self-raising flour, reports the Express. Then pour in four tablespoons of olive oil, for which Jamie said: "Olive oil is very much used in the south of Europe for cakes instead of butter which is more northern.".
He explained the benefit, saying, "What it gives you is a nice spongey sponge, so it's a bit more bouncy and it's good." Finally, mix in two tablespoons of dark sugar, though Jamie mentioned any sugar can be used if dark isn't available. The dark sugar will give the sponge a delicious treacle and deep flavour. Add in one free-range large egg with a pinch of salt, then blitz in the food processor until smooth.
