Take the stress out of Christmas with Jamie Oliver's 'perfect' chicken gravy that can be made in advance. Cooking a festive roast with all the trimmings isn't easy, especially when you've got a dozen family members you hardly ever see coming over. You'll inevitability be spending all morning fretting about whether the turkey will be moist enough, how many roasties you need to sort, and whether those prized Yorkshire Puddings will rise.
But as Jamie says: "Good gravy has the power to transform, or even save, a meal. Open your mind to a slightly radical idea: make your gravy a few days, or even weeks in advance, simply reheating it in your turkey tray on the Big Day." Foodie Charlotte Louise Taylor says the chef's recipe is her go-to - and that she 'cannot recommend it enough'.
"I make this every year, whether I'm hosting or not," she said in a recent TikTok video. "It's often my contribution for whoever might be hosting Christmas, if it's not me. And I just think it's one of the best time savers. "Tip: make sure you give it another taste before serving up. Some great additions for extra flavour include soy sauce, Marmite (both great for umami hits) and you could even simmer a cinnamon stick for a little extra festive punch too.'.

If you have frozen the sauce, take it out to defrost two days before Christmas. On the 25th, add the gray to your turkey tin once you've moved your meat to rest. "Bring to the boil over the hob and scrape up all those sticky bits from the base," Jamie said. "Have a taste, then stir in the cranberry sauce to balance the flavours.".
