As the nights get longer and colder, what could be better than tucking into a delicious, home-cooked meal that's as comforting as it is healthy?. Ensuring good nutrition is essential during the winter to stay strong and keep those bothersome bugs at bay. And Jamie Oliver has just the recipe, a vegetable-packed dish that nails comfort food while delivering two of your five-a-day.

The celebrity chef's veggie pasta bake has been hailed as a "family favourite" and is not only easy to whip up but also allows for swapping in whatever veggies you have on hand. It's a real crowd-pleaser, feeding eight people at a budget-friendly £1.31 per serving.

Jamie can't help but rave about it on his website, saying, "When it comes to family favourites, it's pretty hard to beat a good pasta bake. Especially when it has a deliciously crunchy garlic-breadcrumb topping," he adds in a video. "This is my brilliant veggie principle recipe – with leeks, spinach and tomato, offering you two of your five-a-day – that you can flex to suit the ingredients you have in.".

Take the garlic bread and tear it into pieces before putting it into a blender. Blitz it until you have fine breadcrumbs. Mix these crumbs with a little olive oil and set them aside for later. Preheat the oven to 180°C/350°F/gas 4. Peel and finely slice the garlic, trim, wash and finely slice the white part of the leeks. Drizzle two tablespoons of oil into a large shallow casserole pan over a medium heat, add the garlic. Finely slice the basil stalks, then add them to the pan, along with the oregano and gently fry for a couple of minutes.
