As the festive season approaches, James Martin has shared a brilliant tip for those Boxing Day leftovers with OK! that goes beyond the usual turkey curry or sandwiches. The 52 year old culinary maestro, known for his inventive dishes ranging from sumptuous Christmas cheeseboards to crispy Buffalo chicken wings adorned with blue cheese and a sriracha honey drizzle, has revealed a "lighter" dish that's bound to be a family favourite.
Ditching the standard fare, the famed chef and TV host recommends trying out potato and chicken waffles, drizzled with maple syrup, as an innovative way to repurpose those remaining potatoes and chicken, or even turkey, steering clear of the conventional curry.
James explains how to whip up this tasty treat: "Potato waffles are very good with leftover bits of chicken. You dice up the chicken and your leftover bits, add to the waffle mixture plus the cooked potatoes, and cook in a waffle machine. To finish, just drizzle with a little bit of maple syrup.".
For another quick and delicious Boxing Day recipe, James also suggests turning leftover beef and turkey into delightful toasties. James has let slip his secrets for a stress-free Christmas dinner, complete with all the classic fixings. According to him, it's all about tradition, "It’s always turkey for my mother, but I usually also pick a nice joint of beef. I treat Christmas lunch like any other Sunday lunch, it’s no different — people always stress out about Christmas.".
